4 Carrots
2 - 3 Celery Stalks
1 Onion
1 Garlic Clove
Olive Oil or Butter
Bag of Dried Split Peas
1 Bay Leaf
8 Cups Water (Here I will substitute 4 cups of chicken broth and just use 4 cups of water)
Chopped Ham
Salt and Pepper
Directions
Chop carrots, celery, onion and garlic clove. Sautee in a little olive oil and/or butter. Add 8 cups liquid and rinsed bag of split peas. Bring to a boil, then lower heat to a simmer and cover. Cook until peas are broken down and soup is creamy. I add chopped ham after about an hour of cooking and continue to cook. Salt and pepper to taste.
